Eggplant Caviar

When my dad comes to town we always try to eat even healthier to accommodate his dietary needs. I once tried a similar recipe to this eggplant caviar at his house, but decided I’d find a recipe and make it my own. Feel free to adjust the crushed red pepper if you prefer more or less heat. We serve ours up with fresh sliced veggies and gluten-free tortilla chips. It really is a bright and fresh dip that will keep for several days of snacking or even lunch. It is an amazing healthy addition

2 medium eggplants, halved lengthwise
2 T olive oil
2 red bell pepper, diced
2 small onion, minced
6 garlic cloves, minced
2 large tomatoes, diced
6 T fresh lemon juice
Salt and freshly ground pepper
4 T minced chives
2 T minced fresh basil
2 T crushed red pepper
