Emmy's Peach Cobbler

Peach Cobbler that is neither too "pie crusty" nor too "soupy."

2 -15 oz cans peach slices in heavy syrup (you will drain 1 can)
1 cup flour
1/2 cup granulated sugar
1 stick butter (NOT softened)
1 tsp baking powder
1/2 tsp salt
1 Tbsp ground cinnamon
1/4 cup brown sugar

I use the food processor for this recipe, but you could put dry ingredients in a bowl and use a pastry cutter to do the same thing.
Put flour, granulated sugar, baking powder, and salt into food processor. Put lid on and pulse for just a second to mix dry ingredients.
Cut butter into pieces approx 1 Tbsp each. Drop them into the flour mixture and place lid on food processor. Process mixture for about a minute.
Mixture will be crumbly, resembling the pea sized crumbs as when making a pie crust.
Drain one can of the peaches. Pour both cans of peaches into an un-greased 2 quart baking dish (this will include the juice/syrup from on of the cans of peaches).
Sprinkle four mixture evenly over the peaches.
Sprinkle cinnamon over flour mixture.
Sprinkle brown sugar on top of cinnamon.
Place in center of oven on the middle rack and bake for 30 minutes.
Remove from oven and let stand for 5 minutes. Serve hot, topped with vanilla ice cream.
