Epic Triple Chocolate Cookies

These cookies were created as the result from clearing the fridge of my chocolate hoarding. A must when that chocolate craving hits- sit back with a plate of these cookies and indulge in your guilty pleasures!

2 cups flour
1/4 cup unsweetened cocoa powder
2 teaspoons cornstarch
1 teaspoon baking soda
1/4 teaspoon salt
1 cup brown sugar
1/2 cup white sugar
3/4 cup unsalted butter, softened
1 tablespoon golden corn syrup
1 teaspoon vanilla
1 egg
2 oz unsweetened (or semi sweet) chocolate, melted
3 oz each white, milk and semi sweet chocolate, chopped
1/4 cup unsweetened cocoa powder

1/4 teaspoon salt

2 oz unsweetened (or semi sweet) chocolate, melted
3 oz each white, milk and semi sweet chocolate, chopped
Preheat oven to 350 F.
In a small bowl add flour, cocoa powder, cornstarch, baking soda and salt, using a whisk to combine.
In a large bowl, use a hand mixture to cream butter and sugars until smooth and fluffy, and the mixture lightens in colour - about 2 minutes. Beat in corn syrup, vanilla and egg and continue to mix on medium speed for 2 minutes. Add melted chocolate and mix for an additional minute.
Slowly incorporate dry mixture into the wet, with hand mixture on low speed. Using a spatula, mix in chocolate chunks.
Spoon cookie dough in heaping tablespoons on to a lightly greased or silpat lined baking sheet (If you have never used a silpat sheet before, go out and get one now! Seriously, it will be one of the best baking investments you make! No more greasing, and perfect cookies that will never stick.) about 1 inch apart.
Bake cookies for 8 minutes (That's it- 8 minutes only. Trust me, do not over bake if you want that oh so soft inside), remove from oven and let them rest for a few minutes before transferring to a cooling rack. Enjoy with a glass of cold milk!
