Escalloped Corn

This dish is always a favorite at holiday gatherings, potlucks, and as a simple side dish with dinner.

1 box Jiffy corn bread mix
1 can corn
1 can creamed corn
1 stick margarine, melted
1 cup sour cream
Pepper to taste
Diced jalapenos (optional)
Shredded cheddar (optional)
Drain half of the juice from corn. Combine with Jiffy mix, creamed corn, margarine, and sour cream. Stir until creamy. Add pepper, jalapenos, and cheddar as desired. Spray a 9x13 with cooking spray. Pour mixture into baking dish and bake at 350º for 45 minutes to 1 hour. Top should be golden brown when done. Enjoy!
