Cauliflower Mac & Cheese with a kick

1 Head of Cauliflower - Steamed
4 oz. Sharp cheddar cheese - grated (save some for garnish)
2 oz. Mozzarella cheese - grated
1/4 grated parmesan cheese
1/2 large red onion, or 1 small - diced
1/2 Cup nonfat greek yogurt
4 oz. fat free cream cheese - softened
1/3 Cup fat free milk
4 slices bacon - cooked and chopped (save some for garnish)
1 jalapeno pepper, seeded and minced
1/2 teaspoon minced garlic
1/4 teaspoon ground black pepper
1/4 teaspoon salt
Steam cauliflower until just tender - drain well and dice Dice and mince onion and jalapeno pepper Mix together cream cheese, cheddar cheese, parmesan, yogurt, onion, bacon, milk, garlic, salt and pepper. Don't forget to save some cheese and bacon for the topping Mix in cauliflower and mix well Place into a 3 qt. casserole dish preferably with a lid (if not just cover with foil) Bake at 350 for 30 minutes - remove lid and back for another 10 minutes or until cheese is bubbly on top.
