Fake Out Take Out - Lo Mein

I don't get take out very often, but when I do, it's almost ALWAYS chinese. It's certainly my weak spot. The down side is, I don't actually know what is going into this delicious food. Sometimes I don't want to know :-). Okay so who knew it was this easy to recreate something that tastes like it came from a take out carton and certainly is healthier. I used vegetables that I had in my house already but you could mix it up with using snow peas, cabbage, beans, pep

1/4 C soy sauce

1 T light brown sugar)

3 clove garlic, chopped or minced

1 tsp freshly grated ginger

1/8 tsp black pepper

2 T canola oil

1/2 tsp peanut oil (optional but advised)

2 packages yaki soba noodles (the refrigerated ones) discard flavor packets that are included)

3 stalks celery, sliced

1 onion, sliced

1 can baby corn, drained and chopped if desired

1 can bean sprouts, drained
