Yummy Spice Cake, cream cheese in a white chocolate shell. A wonderful taste of Fall

1 Boxed Spice Cake Mix - your going to bake this as the package directions state)
Cream Cheese Frosting - Recipe included
8 oz. cream cheese - softened
1 Cup confectioners sugar - sifted
1/4 Cup butter softened
1 tsp. vanilla extract
Mix all ingredients together using a mixer - mix until smooth and creamy
Set aside
2 lbs. white chocolate discs (found at most bakery supply stores or Michaels Craft Store)
Garnish: (optional) sprinkles, graham cracker crumbs, gingersnap cookie crumbs, cinnamon
Make and Bake Boxed Cake mix as directed on the box. Make Cream Cheese Mixture - set aside When Cake is COMPLETELY cooled, in a large bowl break cake up and crumble into very small crumbs (I wear gloves this gets messy) Make sure there are no arge pieces. Add Cream Cheese mixture and continue to work with your hands, mixing together - it will get really mushy but thats fine. When its all combined really well roll into a ball or log and wrap in plastic wrap and place in the refrigerator for At Least 1 hour. I have left it in the fridge up to 3 days. When your prepared to finish the Spice Balls, remove from refrigerator and roll into balls. This makes approx. 48 balls depending on how large or small you make them. Remember they will get a little larger after you dip them into the chocolate. After all the balls are formed place back into the refrigerator for 15 minutes. (At this time IF you wish to freeze them then place them in the freezer on a cookie sheet, let them completely freeze and then you can transfer them to a freezer zip lock bag and they will be great for up to 3 months in the freezer...thaw completely in the refrigerator before dipping them in chocolate) Meanwhile melt chocolate discs in the microwave in batches, don't try to melt them in large batches or your chocolate will seize up and be ruined. Remove your spice balls and dip in chocolate making sure to garnish before they start to harden. Store in the refrigerator until ready to serve. Enjoy
