Soft, fluffy and basically irresistible! Topped with toasted pecans and a sweet cinnamon icing.

For the cake:
¾ cup butter, softened
½ cup packed brown sugar
½ cup white sugar
2 eggs
1 tsp vanilla
1¾ cup all purpose flour
½ tsp salt
1½ tsp baking powder
2 cups grated zucchini
¾ cup shredded coconut, unsweetened
For the icing:
2 tbsp butter, softened
1 tsp vanilla
2 tbsp milk
1 tsp cinnamon
Topping:
1 cup toasted pecans, chopped (optional, but highly recommended)
