Fire and Ice Chicken Bites

A spicy yet creamy sauce pairs beautifully with the crisp coolness of cucumbers and celery to make these Fire and Ice Bites. The Rotisserie chicken makes these little bites super simple to make.

2 English (seedless) cucumbers
2 cups chopped rotisserie chicken breast
4 oz Whipped Cream Cheese
¼ cup diced celery
¼ cup chopped green onion tops
2 tbsp mayonnaise
2 Tbsp Siracha Hot Sauce

Wash cucumbers. Trim ends. Slice cucumbers into 1 inch thick rounds. Using a baby spoon, or a small melon baller, remove most of the centers of the cucumber slices to form “cups”. Cover and chill until ready to use.
Mix together chicken and remaining ingredients to make the chicken salad. Allow to flavor 15 minutes.
Scoop chicken salad into hollows of each cucumber cup. Serve cold. Store any leftovers covered, in the refrigerator.
