A spicy and sweet sauce caramelized over crispy bits of chicken, served over rice to catch all the yummy sauce!

2-4 tablespoons peanut or canola oil
3-4 boneless, skinless chicken breasts (about 2 pounds)
Salt and pepper
1 cup cornstarch
2 large eggs, beaten
1/3 cup hot sauce (I use Frank’s brand for hot wings since it is thicker)
1 cup packed light brown sugar
1 tablespoon water
2 teaspoons apple cider vinegar
1/2 teaspoon salt
