Fish Tacos with Chili Lime Dressing

The combination of chili powder and other seasonings is the PERFECT accompaniment to seafood {and pretty much any other meat you want to grill or bake} and let me tell you, it really is delicious. Served with a side of rice or even maybe a little fresh corn? Yum.

For The Fish & Marinade:

1 pound tilapia fillets, cut into bite sized chunks
1/4 cup extra virgin olive oil
2 tablespoons fresh lime juice
1 clove garlic, minced
2 teaspoons seafood seasoning such as Uncle Bob’s Salts
1 -2 teaspoons hot pepper sauce, or to taste
2 teaspoons honey

For The Dressing:

1 (8 ounce) container light sour cream
1/4 cup olive oil
2 tablespoons fresh lime juice
¼ cup pepper juice from canned / jarred chipotle peppers
1 teaspoon seafood seasoning, such as Uncle Bob’s Salts
Salt and pepper to taste {I didn’t need any at all}

Toppings:

1 package small flour tortillas
2 ripe tomatoes, seeded and diced {or canned and well drained}
½ onion, finely diced
3 tablespoons cilantro, chopped plus extra for garnish
1/2 small head red cabbage, cored and shredded
2 limes, cut into wedges
