Flaxseed Chocolate Chip Cookies

These chocolate chip cookies are a great for a healthy snack and not feeling bad about it either. They have a perfect crunch and full of flavor.

2 cups white whole grain flour
2 tbsp ground flaxseed
1 teaspoon baking soda
1/8 teaspoon ground cinnamon
2 eggs
1 teaspoon vanilla extract
7/8 cup margarine ( room temperature )
2 tablespoon vegetable shortening ( at room temperature )
1 1/2 cups raw sugar
2 cups semi-sweet chocolate chips
1 cup walnuts ( chopped, optional )
2 tbsp ground flaxseed
1 teaspoon baking soda
1/8 teaspoon ground cinnamon
2 eggs
1 teaspoon vanilla extract
7/8 cup margarine ( room temperature )
2 tablespoon vegetable shortening ( at room temperature )
1 1/2 cups raw sugar
2 cups semi-sweet chocolate chips
1 cup walnuts ( chopped, optional )
1. Combine Margarine, shortening and sugar in mixer and mix until combined well.
2. Add eggs one at a time on low speed .
3. Add vanilla extract, baking soda, flaxseed and cinnamon.
4. Stir in flour one cup at a time. Mix until everything is combined. Do not over mix!
5. Slowly add the chocolate chips and walnuts.
6. Bake cookies at 375*F for 10-12 minutes or until golden brown. Allow cookies to rest on the sheet for 5 minutes for the cookies to set. Transfer the cookies to a baking rack and allow them to cool all the way.
7. Enjoy!
