Fluffernutter Sandwich Cookies

These Fluffernutter Sandwich Cookies are reminiscent of my favorite childhood lunchbox sandwich. Marshmallow buttercream is sandwiched between two chewy peanut butter cookies, for an amazing treat.

for the cookies:
1/2 cup butter, softened
3/4 cup creamy peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 tsp vanilla
3/4 tsp baking soda
1/4 tsp salt
1 3/4 cups flour

for the marshmallow buttercream:
1 cup butter, softened
1 jar marshmallow creme
1 cup powdered sugar
1/2 tsp vanilla

reheat oven to 350. Combine the butter, peanut butter, sugar, brown sugar, egg, and vanilla. Beat together until smooth, then mix in the flour, baking soda, and salt. Let the dough chill in the fridge for...
