These Fluffernutter Sandwich Cookies are reminiscent of my favorite childhood lunchbox sandwich. Marshmallow buttercream is sandwiched between two chewy peanut butter cookies, for an amazing treat.

for the cookies:
1/2 cup butter, softened
3/4 cup creamy peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 tsp vanilla
3/4 tsp baking soda
1/4 tsp salt
1 3/4 cups flour

for the marshmallow buttercream:
1 cup butter, softened
1 jar marshmallow creme
1 cup powdered sugar
1/2 tsp vanilla
