Fluffy Spoon Bread

This bread is a light souffle type bread that is spooned onto the plate and eaten with a fork. You can serve this as an accompaniment to your meal or serve it as part of your meal. Either way your family and friends will be delighted at the fluffy delicious bread dish.

1 1/2 cups boiling water
1 cup cornmeal
1 tablespoon butter or margarine, softened
3 eggs, separated
1 cup buttermilk
1 teaspoon salt
1 teaspoon sugar
1 teaspoon baking powder
1/4 teaspoon soda
Heat the oven to 375 degrees. Grease a 2 quart oven proof casserole dish. In a large bowl, stir the boiling water into the cornmeal. To prevent lumping, continue stirring the cornmeal until the mixture is cool. Next blend in the butter and the egg yolks. Next stir in the buttermilk, the salt, the sugar, the baking powder and the soda. On high speed of your mixer, beat the egg whites until they are stiff and fluffy. And then fold them into the cornmeal batter. Pour this mixture into the oven proof casserole dish and bake in the oven 45 to 50 minutes. Serve this delicious bread hot with lots of butter.
