A heavenly lemon spread that you can use on anything. Or alone. You decide!

Zest of 3 large lemons
1/2 c. lemon juice
1 1/2 c. sugar
1 stick (1/2 c.) unsalted butter, room temperature
4 extra-large eggs
1/8 teaspoon kosher salt
