[Freezer] Breakfast Burrito

Hearty, breakfast burritos filled with eggs, meats, potato, peppers, and cheese! A make ahead item to make your mornings that much easier.

2 large potatoes, peeled and chopped into small chunks
2 tsp. vegetable oil, divided
1 lb. chicken, turkey chorizo, or breakfast sausage
1 red bell pepper, chopped
1 small white onion, chopped
12 large eggs
1/2 c. milk
1/4 tsp. salt
1/8 tsp. pepper
8 oz. shredded Mexican blend cheese
15-20 flour tortillas
