These light and fluffy lemon scented cupcakes are filled with a bright, tart lemon curd and topped with a rich, creamy vanilla frosting.

For the Lemon Curd:
½ cup fresh lemon juice
½ cup granulated sugar
2 large eggs at room temperature
2 large egg yolks at room temperature
6 tbs unsalted butter cut into 1-inch cubes
pinch of salt
For the Lemon Scented Cupcakes:
1½ cups plus ? cup cake flour
1¼ tsp baking powder
½ tsp salt
3 tbs unsalted butter melted and slightly cooled
3 tbs vegetable oil
1 cup granulated sugar
2 large eggs at room temperature
2 tsp vanilla extract
2 tsp lemon zest
? cup milk at room temperature
For the Vanilla Frosting:
2½ sticks unsalted butter at room temperature
2½ cups confectioners\' sugar
2 tsp vanilla extract
pinch of salt
1 tsp cream or whole milk
