Fresh Pumpkin Cake

A nice light cake, made with fresh pumpkin.

1/2 cup butter, softened
3 eggs
1/2 cup unsweetened applesauce
1 cup sugar
2 tsp vanilla
3 tsp cinnamon
1 1/2 tsp ginger
1/2 tsp salt
1 tsp baking soda
2 cups flour
1 cup pure pumpkin puree (I used fresh)
1 cup chopped pecans
3 eggs
1/2 cup unsweetened applesauce
1 cup sugar
2 tsp vanilla
3 tsp cinnamon
1 1/2 tsp ginger
1/2 tsp salt
1 tsp baking soda
2 cups flour
1 cup pure pumpkin puree (I used fresh)
1 cup chopped pecans
In a mixer, combine butter, eggs and applesauce and beat until smooth. Add in sugar, vanilla, cinnamon, ginger, salt and baking soda and beat until combined. Add in flour, one cup at a time and beat well....
