Fried potato balls

1 kg potatoes
1 tablespoon olive oil
1 onion
2 eggs
1/2 cup crumbled cheese
1/2 bunch parsley
1/4 teaspoon black pepper
1/2 teaspoon salt

For breading:
2 eggs
1/2 cup flour

For Frying:
oil - about 2 cups
Cook potatoes and puree. Put them in a large bowl along with other products. Stir the mixture well and form into balls. Roll potato balls first in flour, then dip them in beaten eggs. Fry them on both sides in hot oil. Remove them on paper towels to drain excess fat. Serve while hot.
