From Scratch Candy Cane Poke Cake

2 cups sugar
4 Eggland's Best Eggs
2 1/2 cups all purpose flour
1 cup milk
3/4 cup vegetable oil
2 1/4 teaspoons baking powder
1 teaspoon vanilla
cooking spray

pudding:
3.4 ounce box vanilla pudding (plus milk to make according to package directions)
peppermint extract
green food coloring

cream cheese frosting:
4 ounces butter, softened
4 ounces cream cheese, softened
2 cups powdered sugar
1 teaspoon vanilla extract
green food coloring

candy canes, crushed
Preheat oven to 350 degrees. Spray a 9x13 baking dish with cooking spray. In a large mixing bowl, with an electric mixer, beat sugar and eggs together until combined, about 1 minute.
