Garlic Knots-Herbed

Perfect for pasta, soup or they may be served as starters with your fave sauce dip or as snack. I add dried herbs in the dough itself and it smells heavenly while they bake in the oven then coat the baked knots with olive oil or butter and garlic and sprinkle them with grated Parmesan cheese. I like that it has a bit of crunchy exterior but is soft inside!

FOR DOUGH:
150 ml warm water
250 g flour (2 cups)
1 Tbsp instant active dry yeast
1 tsp salt
2 Tbsp olive oil (or veg. oil)
½ Tbsp sugar
1 Tbsp dried thyme
1 Tbsp dried oregano
1 Tbsp dried basil
FOR GARLIC COATING:
2 big cloves of garlic, crushed finely
1 Tbsp dried(or fresh) wild garlic (ramsons) or fresh parsley, chopped finely
3 Tbsp olive oil (or melted butter)
1-2 Tbsp grated Parmesan or hard cheese (optional)
1 tsp salt
Dissolve sugar in warm water and set aside. In a large bowl, mix all dry ingredients for dough. Add oil and slowly add the warm water while continuously stirring with a fork and then by hand until a dough...
