Garlic & Olive Oil Roasted Beet

2 Medium fresh beets (peeled)
1-2 tablespoon olive oil
1/2 teaspoon sea salt & garlic seasoning
1 tablespoon garlic flavored olive oil
6oz yellow sunburst tomatoes (cut in half)
2-3 fresh basil leaves (slivered)
salt & pepper to taste
Optional
chopped fresh mozzarella cheese (to garnish)
Pre-heat oven to 350 degrees. Using a spiralizer or julienne peeler, cut the beets into strips using the smallest blade. The noodles will be very long so you can cut them in half or thirds to make them...
