German Chocolate Cupcakes with Caramel Frosting

Delicious little bites of heaven - chocolate cupcakes topped with caramel frosting, coconut and pecans.

Cupcakes
1 cup flour
1 cup sugar
1/2 cup Dutch cocoa
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup skim milk
1/4 cup vegetable oil
1 egg
1 tsp. vanilla
1/2 cup boiling water

Caramel Frosting
1/4 cup butter
1/2 cup dark brown sugar, packed
1/2 cup low fat evaporated milk
2 tsp. vanilla
2 cups powdered sugar
2 T chopped pecans, toasted
2 T flaked sweetened coconut, toasted
Heat oven to 325 degrees. Cupcakes: Place liners in mini cupcake tin and spray lightly with cooking spray Combine all ingredients through salt in a large mixing bowl (I use my Kitchen Aid). Mix the dry ingredients to combine. Add milk, oil, egg and vanilla to flour mixture and mix on medium speed until well combined. Reduce speed and slowly add boiling water to the batter. Increase speed to high and beat 1 minute. Fill each cupcake liner about 3/4 full. Bake in the oven 10-12 minutes, or until done. Makes 24

Rich and fudgy, this easy Chocolate Zucchini Bread is the perfect cross between a chocolate pound cake, brownies, and a classic loaf of zucchini bread! It's moist and tender thanks to sour cream in the batter, and studded with miniature chocolate chips for even more decadent flavor. Serve a couple of slices of double chocolate zucchini bread for breakfast or brunch with a cup of coffee, for an afternoon snack with a glass of milk, or with a scoop of vanilla ice cream for a delicious dessert.

2 eggs
2 t vanilla extract
2 c all purpose flour
1/2 c unsweetened cocoa powder
1 (½ t) baking powder
½ teaspoon baking soda
