Gluten Free Blueberry Crepe

If you are craving something sweet and like blueberries this is wonderful. This does have margarine and sour cream in it in case you are sensitive to those ingredients.

rice flour
egg
water
white sugar
sour cream
honey
margarine
Mix one egg and 1/3 cup rice flour with enough water that when you pour it into a hot skillet you can scatter it out to the ends of the pan. Thin. Like a crepe. Allow to brown on one side and flip. Remove from heat. In a microwave combine margarine, white sugar, blueberries til heated through. Drain liquid and add to crepe. Combine 1/3 cup sour cream and equal parts honey. Add this to the blueberries in the crepe. Fold the crepe and brown in skillet; seam side down for about one minute. Remove from heat and top with the blueberry liquid that had been drained.
