Gluten Free Chicken and Dumplings

1 fryer chicken
1 medium onion
2 large stalks of celery
2 large carrots
3 cups water
1 bay leaf
1/2 tsp thyme
1/2 tsp poultry seasoning
1 tsp pepper
1/2 tsp garlic salt
2 T cornstarch
1/2 c water
Biscuit dough
Rinse the chicken, gut and place in crock pot. Add onion, carrots, celery, seasoning and 3 cups water. Simmer on high until cooked. About 6 hours. Drain liquid into a pan and bring to a boil. Remove meat from chicken and put back in crock pot. To the broth in the pot add cornstarch that has been made into a paste with the 1/2 cup water. Stir with a whisk and bring to a simmer. Make biscuit dough and add to gravy. Boil 10 minutes. Pour gravy and biscuits over the chicken and serve hot.
