¾ cup of gluten free organic coconut flour
1tsp baking powder
½ tsp salt
1cup sugar
3 eggs
1tsp vanilla extract
¼ cup vegetable oil
½ cup semi sweet dark chocolate chips
In a bowl mix the eggs, oil, vanilla extract, and your choice of sweetener until the mixture is smooth. In a measuring cup mix the coconut flour, baking powder, salt, and chocolate chips. Gradually mix in the dry ingredients with the wet ingredients. Coconut flour needs more moisture, so if the mixture is too dry add water as needed. Once the mixture is thick, but not dry and completely combined, spoon the cookies on greased cookie sheet. Bake for 15 minutes in the oven preheated to 350 F. Enjoy!
