Gluten Free Instant Pancake Mix Recipe

This pancake mix is perfect and you won't be sorry you tried it! It's as close to instant that I could get.

For the instant pancake mix:
3 1/4 c gf flour - minus the xanthan gum
1/4 c + 3 TBS instant dry buttermilk
2 TBS baking powder
1 tsp baking soda
1 1/2 tsp salt
3 TBS sugar
For the cinnamon topping:
4 TBS unsalted butter - melted
1/4 + 2 TBS packed brown sugar
1/2 TBS ground cinnamon
