Gnocchi & Butternut Squash in Spiced Brown Butter Sauce

It’s easy to prepare for just one person or a whole dinner party. It is full of different textures and holiday flavors which make it a truly unique dish.

1 small butternut squash, peeled & cubed
1 tbsp extra virgin olive oil
Salt & pepper to taste
1 lb gnocchi
½ cup (1 stick) salted butter
1 tsp pumpkin pie spice
2 tsp cinnamon
1 tbsp brown sugar
1/3 cup chopped walnuts
¼ cup dried cranberries
