This has been a favorite of ours for a while now. I love the very creamy, distinctive taste of goat cheese, mixed with the crunch of the pumpkin seeds. very often I look for healthy meals that are quick and simple, yet satisfying. The goat cheese is creamy and digests easily, containing a fair amount of protein, and the pumpkin seeds have many added health benefits as well. This usually keeps me satisfied for a while. * Leaf lettuce
* Pumpkin seeds
*Goat cheese
Dressing (these are just approx. measurements- flavour to your liking!)
* 1 tablespoon fresh lemon juice
* 1 tablespoon olive oil
* 1 clove of garlic chopped
* a pinch of basil (or any other herbs you wish to add)

*Goat cheese
