What is better than a warm, homemade muffin for breakfast.! These can be made with or without the streusel topping.

1 egg
1/2 cup sugar
1/4 cup vegetable oil
1/4 tsp vanilla
1 cup flour
1/4 tsp salt
1/4 tsp baking soda
1/2 cup sour cream
1/2 cup blueberries
STREUSEL TOPPING:
1/2 cup sugar
1/3 flour
1/4 cup cold butter, cut into small cubes
1/2 cup sugar
1/4 cup vegetable oil
1/4 tsp vanilla
1 cup flour
1/4 tsp salt
1/4 tsp baking soda
1/2 cup sour cream
1/2 cup blueberries
STREUSEL TOPPING:
1/2 cup sugar
1/3 flour
1/4 cup cold butter, cut into small cubes
Preheat oven to 400 degrees. Grease 12 muffin cups or line with paper muffin liners.
