Grandpa's Favorite Apple Turnovers

These were my grandpa's favorite dessert. They are sweet and a little tangy because I use granny smith apples.

1 tablespoon lemon juice
2 granny smith apples, peeled, cored, and sliced thin
1 tablespoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon cardamom
1 cup cold butter
1 tablespoon sugar
2 cups flour
1/3 cup water
1 egg
1 teaspoon water
