Greek Salad

A chunky vegetable salad perfect with chicken or fish

1 cup grape tomatoes, halved
1 cucumber, peeled, seeded and sliced into half moons
1 bell pepper (red, orange or yellow), chopped
1/4 red onion, thinly sliced
2 Tbl. red wine vinegar
1 Tbl. olive oil
1/2 teaspoon dried oregano
1 clove garlic, minced
1/2 cup crumbled feta cheese
In a medium bowl, combine red wine vinegar, olive oil, oregano and garlic. Add vegetables. Top with feta cheese when serving. May also add chopped, canned artichoke hearts and/or kalamata olives.
