Every now and then we need to make some sweet for special occasions but we need it simple, delicious and as healthy as possible... If you want to make something tasty but harmless and fun to make with children, here is one recipe.

The ingredients you will need:
2 cups of self-rising flour or 2 of cups all-purpose flour with 1 tea spoon of baking powder
1 cup of olive oil (no butter but still delicious, I promise, and extra healthy!)
2 cups of sugar
5 eggs
1 cup of freshly squeezed orange juice
orange zest (about two tea spoons)
100 gr of ground walnuts
confectioner’s (icing) sugar for decoration
(optional) 1 lucky coin (well cleaned and wrapped in foil!)
1.First preheat your over to 350 F (180 Celsius). 2.Beat the eggs and sugarwith an electric mixer on high speed for about 5 -6 minutes or until the mixture has thickened and turned into a very pale whitish colour. 3.Add the olive oil and the orange juice. 4.Now stop and add the flour and beat in low speed until it’s incorporated. 5.Add with a spatula the ground nuts. 6.Put the mixture into the round pan (in which you have first put a round piece of parchment paper at the bottom) 7.Bake for about 75 minutes. 8.After the cake has cooled completely, push the coin inside at random from below (so it doesn’t show). Whoever finds it will have a lucky year! 9.Turn the cake around and sprinkle on top as much confectioner’s sugar as you like. Enjoy ! Kali orexi! G.CH-K
