Greek Yogurt - Granola Bread

I've loved this recipe for years, but didn't try it with Greek yogurt until recently. Just as light and delicious, but even more nutritious!

2 1/4 teaspoons yeast (one packet)
2 1/2 cups bread flour
1 cup whole wheat flour
1/2 cup plain granola--without raisins (this is a good way to use up the crumbs in the bottom of the package)
1 teaspoon salt
1/2 cup plain Greek yogurt
1/4 cup honey
2 tablespoons vegetable oil
1 egg
3/4 cup hot water
Put all ingredients in bread machine on the "dough" setting. After the dough has mixed for a couple of minutes, check to see if the dough looks too dry or too wet, and add water or flour a couple of tablespoons at a time until it's the dough forms a firm but not too moist ball. After the dough cycle is complete (mine takes an hour and a half) take the dough out, shape into a loaf and place in a bread pan. (This makes a very large loaf- I usually make it into two half-size loaves* and give one away!.) Allow to rise for an additional 1 and 1/2 hours, until dough is higher than the sides of the pan. Bake in the oven at 350 degrees for about 25-35 minutes. ** If made into two smaller loaves, bake at 375 degrees for 20 minutes. Put melted butter over the top crust while still warm.
