Green Beans and Bacon

These green beans will make even the pickiest eaters ask for seconds! Complimented with bacon, pecans, and a touch of lemon, they'll make your mouth water and go well with any meal!

2 1/2 pounds green beans, trimmed
Kosher salt
1/2 pound bacon, roughly chopped
1 small yellow onion, finely chopped or 1 Tbsp dried onion
3 cloves garlic, minced
Dash of red pepper flakes
1/2 cup chopped toasted pecans
Juice of 1/2 lemon
Freshly ground pepper

Place green beans in a large pot of salted boiling water. Cook for about 5 minutes until crisp-tender. Drain, and poor green beans into a bowl of ice water to stop the cooking. Drain again.
Cook the bacon until crisp. Reserve 2 tablespoons of bacon grease in the pan. Drain bacon on a paper towel lined plate. Add the onion to the pan and sauté until tender. Add the garlic and red pepper flakes and cook until fragrant, about one more minute. Add the green beans and pecans to the pan, and cook for about five more minutes. Add crumbled bacon and lemon juice and toss. Add salt and pepper to taste.
