Green Chile & Cheddar Baked Cornbread Muffins

These baked cornbread doughnuts are a healthier alternative to traditional corn sticks served with North Carolina barbecue. Whip up a batch of these to serve with my Slow Cooker NC Pulled Chicken.

2/3 cup cornmeal
2/3 cup whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup egg substitute
1 cup nonfat yogurt
1 tablespoon butter spray
2 tablespoons sugar
4 ounces green chiles
4 ounces fat free cheddar cheese
