A failed attempt at a green chile chicken stir-fry, this Green Chile Chicken and Rice Skillet dinner is tasty, creamy and with just enough spicy to make it delicious!

12 ounces chicken breast, thinly sliced
1 tablespoon canola oil
2 cups thinly sliced onion
1 cup skinned and chopped poblano peppers
4 ounces green chiles
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon granulated garlic
salt and pepper to taste
14 ounces pinto beans rinsed and drained
10 ounces green chile enchilada sauce
1/3 cup fat free sour cream
1 cup shredded, reduced fat, sharp cheddar cheese
2 cups cooked brown rice
1 tablespoon canola oil
