Beer lovers are not hard to please in general. These people love nothing more than a cold beer on a hot day. Who wouldn't get along with someone like that? If you want to impress this generally easy-going breed, you should start by cooking everything in their favorite libation....BEER! This chilli is sure to please.

1 pound pork shoulder (cubed)
4 celery stalks (finely chopped)
1 largee onion (finely chopped)
2 green bell peppers (finely chopped)
550g can of white kidney beans (or any other white beans)
1 whole head garlic (finely minced)
2 jalapeno peppers(finely chopped)
2 poblano peppers (finely chopped)
16ooz can of cider
3 tbsp vegetable oil
2 limes (juice and zest)
3 cups chicken stock
2 tbsp whole cumin
2 tbsp whole coriander
2 tbsp whole mustard seeds
2 tbsp flour
¼ cup fresh cilantro
¼ cup fresh parsley
¼ cup fresh oregano
½ cup sour cream
200g bag tortilla chips (unsalted would be best)

A Spanish omelette is also known as tortilla de patatas in Spain where it is a tapa and it consists of just four ingredients plus seasoning. It is a Spanish classic dish for very good reasons.
