This green rice is a perfect pairing to any Mexican - style dish.

2 cups long-grain white rice
1/4 cup oil
4 cup chicken broth
1tsp salt, or to taste
GREEN PART
2 leaves green lettuce, such as romaine, torn into pieces
2 green onions, cut into pieces
6-8, or more, sprigs cilantro (I omit and add extra parsley)
1/2 cup, or more, parsley
1 Anaheim pepper, seeded and cut into pieces
2 jalapeño peppers(less for less heat) seeded and cut into pieces
1 Serrano pepper, seeded and cut into pieces
2-3 cloves garlic, peeled and smashed with knife
