A simple marinade with only a few ingredients really brings life to these grilled boneless pork chops. It’s tangy, yet sweet and not overpowering.

6 boneless pork chops, thin cut
2 cloves garlic, pressed or minced
1/2 cup olive oil
1/2 cup balsamic vinegar
2 tbsp brown sugar or honey
1 tbsp fresh rosemary
salt & pepper to taste
1 pint cherry tomatoes sliced
1 8oz pkg marinated mozzarella balls

Place pork chops in a shallow dish or ziplock bag
Combine garlic, oil, vinegar, sweetener, rosemary, salt and pepper in a small bowl. Pour over pork. Marinate for at least 30 minutes or overnight.
