Grilled Red, White, & Blue Potatoes

Fingerling Potatoes - red, white, and blue, cut into 1 inch pieces. I use about 2-5 per person, depending on size of potatoes and person ( adult vs. Little ones)
1/2 red onion, diced
Olive oil
Ground fresh pepper to taste
Add potatoes and onions to small cast iron skillet. I use a 8 inch. Pour enough olive oil that when tossed potatoes are moistened, but not sitting in oil. Season with pepper and place on preheated grill 400-450 degrees. Cook, stirring every 10 minutes or so until potatoes are tender and browned. Approximately 30-40 minutes depending on temperature of grill and amount of potatoes. Remove from grill, being very careful as skillet will be hot. Enjoy.
