Ham and Potato Soup

Potato soup with ham perfect for a rainy day! Top with a little cheddar cheese and chopped green onions to really complete the dish.

4 medium potatoes
1/3 cup onions, diced
1/3 cup carrots, diced
1/3 cup celery, diced
3 1/2 cups water
1 cup ham, diced
3 chicken bouillon cubes
3/4 tsp. salt
1/2 tsp. pepper
1 tsp. garlic, minced
5 TBSP. butter
1/3 cup flour
2 cups milk
Peel and dice up potatoes. Put them in a pot along with water, celery, onion, ham, and carrots. Bring to a boil. Once they come to a boil, lower heat and simmer until potatoes are softened. Stir in bouillon cubes, salt, and pepper. In another pan, melt butter over low heat. Add in flour and whisk until combined. After about a minute, stir in milk and minced garlic. Cook and stir this until thickened. Once this mixture is thick, pour into pot with potato mixture. Stir all together. Serve with cheddar cheese and green onions on top.
