Ham Cheese and Green Onion Souffle

A light, healthy souflle with leftover ham, low fat cheese and green onions

2 tsp. dry breadcrumbs
1/3 cup thinly sliced green onions
2/3 cup diced Orange Apricot Malta Ham
2 tbsp. all-purpose, unbleached flour
2 tbsp. whole wheat flour
3/4 cup 2% fat milk
1/2 cup (2 ounces) reduced fat cheddar cheese
2 egg yolks, at room temperature
4 egg whites, at room temperature
pinch of cayenne pepper
1/2 tsp. ground mustard
1/2 tsp. cream of tartar
1/2 tsp. kosher salt
