Healthier Slow Cooker Au Gratin Potatoes is a healthy and easy Easter recipe to add to the holiday menu. No butter or cream added to this side dish, but you still have all that creamy goodness thanks to addition of nonfat greek yogurt!

3 lbs. medium russet potatoes, peeled and sliced as thin as possible
1 tbsp. extra virgin olive oil
2 medium yellow onions, chopped
4-5 cloves garlic, minced or pressed
3 tbsp. flour
1 1/2 cup low fat milk
1 tsp. fresh ground nutmeg
sea salt and fresh ground pepper, to taste
1/2 cup nonfat greek yogurt
1 cup shredded cheddar jack cheese
Chopped parsley and grated parmesan cheese for garnish
