Healthy-Apple Walnut Muffins

These muffins are healthier since since they have no butter or oil in the batter. The chunks of apples and walnut pieces really add to the flavour of the muffin. It’s a fairly easy recipe, just stir until combined… but be sure to not over mix. Voila, healthy delicious muffins. I hope you enjoy them as much as we do!!!

2 cups all-purpose flour

1 teaspoon baking soda

1/4 teaspoon cinnamon

1/4 teaspoon ginger

1/4 teaspoon allspice

1/4 teaspoon nutmeg

1/4 teaspoon salt

2 large eggs

1 cup plus 2 tablespoons frozen, thawed apple juice concentrate

2/3 cup buttermilk

2 tablespoons oat bran

1 small granny smith apples, peeled, cored and chopped

1/3 cup chopped walnuts

1 small Granny smith apple, peeled, cored and cut into 12 thin slices (for garnish)
