Healthy Blueberry Lemon Muffins - a super easy recipe! Minimal amounts of coconut oil, no white sugar plus all the BEST parts of whole wheat & buttermilk.

2 tablespoons (26g) coconut oil, melted
1/4 cup (60g) unsweetened applesauce
1/4 cup + 2 tablespoons (120g) honey OR agave nectar
2 large eggs
1/2 cup (120ml) low fat buttermilk
1/2 cup (120g) low fat yogurt

1 1/4 cups (150g) whole wheat flour
1 cup (125g) all purpose flour
1/4 cup (50g) light brown sugar
1 teaspoon (4g) baking powder
1/2 teaspoon (1g) baking soda
Zest of 2 lemons
1 cup frozen blueberries
Extra brown sugar for sprinkling, optional
