Healthy Hedgehog Candies – A small bite treat made with healthy ingredients that you can enjoy guilt-free. If you have kids they’ll never know this isn’t “real” candy.

1 cup (120 grams) unsalted dry roasted peanuts
½ cup (60 grams) ground flaxseed
1 tablespoon vanilla extract
½ teaspoon salt
1 ounce pine nuts
Olive oil cooking spray
8 ounces bittersweet (60% cacao) chocolate chips
2 tablespoons coconut oil
1 cup powdered sugar
