Healthy Mozzarella-Avocado Buckwheat Risotto

Very healthy and good tasting gluten free Buckwheat. With mozzarella, radish on butter and lamb’s lettuce. And of course avocado slices.

Cook the buckwheat according the package directions ( I cooked mine just like a rice: 1 cup of buckwheat + 2 cups of water + 1 tsp. of salt. And cook for 15-20 minutes).
