A nutritious, 5-minute breakfast that’s bursting with the fresh flavors of the season, these Healthy Peach Melba Breakfast Shortcakes are a fast, easy way to celebrate warm, sunny days! Whole grain waffles are topped with vanilla Greek-style yogurt, peaches, raspberries, and a simple raspberry sauce for a protein-and-fiber-packed meal that only tastes like a decadent dessert!

2 frozen whole grain waffles, toasted according to package instructions (or your favorite homemade waffle)
½ cup Greek-style vanilla yogurt
1 small ripe peach, sliced (you can also use thawed, frozen peaches)
¼ cup fresh raspberries
1 tablespoon seedless raspberry jam (I like a version that is only sweetened with fruit juice)
